Actually, looking at the most recent control list on mtgtop8, it runs zero last breath and relies mostly on black removal. Their SB plan against burn seems to be around discard and playing creatures that cause us problems. I think Eidolon matches up pretty well against that plan.

The junk matchup is winnable, we can grind them out pretty easily.
I actually think its really hard to grind them out.... discards, whips, vampires, enchantment hate and ghostdads means long drawn out games = death.
The last time I played the matchup was pre-Jou, so I might be out of date.

We really don't need more than 8 cards sideboard vs any deck. There's generally not enough low impact cards to remove. That said, you already have 6 vs control. You could play glare but that strikes me as rather narrow if you know your meta game. Wear // Tear is not a card you want against control....
